Irish Oatmeal With Pears and Vanilla & Breakfast Pizza





I  made the oatmeal for my dinner last night.  It was not as good as I thought it would be, but it was quick and easy to make.  I think I'll try it next time w/ peaches.  I tried 4 different locations to find vanilla beans and couldn't find any, so I had to use vanilla extract.  I think this would be better to cook the oatmeal in the juice from the fruit and not just water.  I give it 7 1/2 -8.  I made the breakfast pizza this afternoon.  Pretty good, but messy to eat!  I give it an 8. 

No-Cheese Lasagna & Peanut Butter and Banana "Sushi"






I made both of these Sunday evening,  I would not have though cheese-less lasagna would be so good, but this was really excellent, a 9!  The "sushi" was something I've made before from my own idea (I added honey), and it's pretty good, an 8 1/2.  Unfortunately it doesn't photograph very pretty! 
P.S. As of this morning, I've lost 3 pounds since I started the Bob Green plan.

Corn and Lima Bean Chowder & Sugar Snap Peas With Peanut Dressing





Both of these are yummy.  I was going to have the chowder for today's lunch and just make the dressing for tomorrow, but I wasn't hungry after the waffles, so I only tried a bite of the chowder.  It was good, an 8 1/2.  It called for thyme, but the last time I used thyme (ha ha), I didn't like it.  I used this new stuff I found called "Perfect Pinch, Vegetable Seasoning."  It has all the best spices in it, I really like it.  It would be good w/ cheese and/or sour cream, bur again, I'm trying to stick w/ the low fat theme. 
As I mentioned, I was just going to make the dressing for the peas, but it looked so good, I decided to have it for lunch today and save the chowder for work lunches.  I love fresh ginger, it smells and tastes so good, so I really love this dressing.  This is my favorite today, easily a 10!  I was supposed to blend the dressing in the processor, but I discovered that I don't like to use my processor for anything w/ oil or buttery type stuff b/c it's plastic, and hard to get nice and clean (non-greasy) afterwards.  It probably should have been less thick and smoother, but it is super yummy anyway! 

Ginger Waffles & Carrot Muffins





Because I have several posts today, I'm going to combine some recipes together. I've had a busy morning and it's not even 2:00 yet. (That's what happens when you can't sleep past 8:00). I made all of the 4 recipes today & still plan to make the "No Cheese Lasagna" for dinner tonight (Maybe - I'm running out of steam!). I was getting ready to make the waffles this morning & realized I didn't have any molasses for the waffles or honey for the muffin recipe so I had to run to the store first, but at least it's a only a minute away.

Waffles: amazing, a 9! I was going to get a larger mixture of berries, but fruit is crazy expensive right now, so I got the blackberries because they were the cheapest. It would have been good w/ bananas and walnuts too. It called for 1/2 regular and 1/2 whole wheat flour, but since I have about 30 # of flour right now, I didn't feel like spending the money on extra flour. I did get bran pretty cheap though.
Muffins: This is the first time I've ever used tofu.  I know, I've been a vegetarian for 2 years and have never tried tofu!  Muffins are not bad, but not wonderful either.  I'll give them a 7 1/2.  They'd be good w/ cream cheese, and a lot more walnuts but since it's a low fat recipe (and diet), I won't add those things.  Raisins would be good too.

Corn Pudding



I made this Monday afternoon.  I wasn't hungry, but knew I had to eat and this looked like a simple recipe.  It was, and it was really yummy, a 9.  I added a tiny bit of butter and cheese.  I think it will be one of my new comfort foods.
p.s. I'll be using that cookbook a lot for a while.  I'm going to start using it as my diet plan for the next few weeks.

Pineapple Coffee Cake




I made this today also (for my mom & me).  It's supposed to be made with plain rolls, but I decided to use the orange rolls that come w/ the orange cream cheese icing.  I really think that helped make this a 10!  It still would have been goods plain, but maybe only an 8.  The orange in the rolls and icing was perfect w/ the pineapple.  I accidentally melted the butter too much (when softening it) for the crumb topping so it was more of a paste than a topping.  I could have remade it w/ new butter, but I didn't want to waste the ingredients. But it turned out to be a good mistake because it caramelized when it cooked and tasted so much better than a crumb topping.  This would be great in my barkery!  I would make it as I did and rename it: Orange-Pineapple Carmel Rolls.

Spinach Twist



I ended up making this twice, once yesterday and again today.  I was just going to give my dad a sample of it, but he liked it so much I let him take it home.  He made me feel good when he said he doesn't like spinach, but he really loved this dish.  He had a second helping and when I asked if he wanted to take it home he didn't hesitate to say yes!  I made it again for me and my mom today.  She really liked it too.  I give it a 10!  So yummy!  I don't think I changed anything.  It's just not a pretty as the photo in the recipe book, but it sure tasted amazing! 

Garden Salad Pizza



I've used this cookbook once or twice before, but not since I've started blogging about the recipes I try.  I made 3 recipes from it this weekend.  I made this pizza on Friday.  The dough looks raw in the photo, but it was cooked.  I only changed a few things.  It called for chive sour cream, but I bought a big thing of cream cheese at Costco, it it didn't come in flavors.  So, I just added my own chives to plain cream cheese.  I also decided to add a little bit of cheese (pizza blend).  You're supposed to eat the veggies raw after you cook the crust, but I decided to cook it after I added the toppings for a little bit (just enough to melt the cheese & make the veggies tender).  And I accidentally bought zucchini instead of cucumber.  I do that sometimes, just shows I'm not a professional cook, I'm sure they don't make those kind of mistakes!  It was pretty good, but I'm sure the cucumber would have made it a lot better, & I think I'd skip the onion and trade it for sprouts.  I'd give it an 8 1/2 but the few change could bump it to a 9 1/2.

Veggie Bacon, Apples, & Cheddar Cheese




I invented a new snack & a new sandwich using the above ingredients.  Yum for both!  My new favorite snack!
