Tomato Zucchini Bake




I made this for my dinner the same night I made Mel's hash.  This was simple with only a few ingredients, but oh so yummy - a  9 or even a10!  (Mel gave it a 10 also)  I will absolutely make this again and again!

Chicken Hash





 
I made this for Mel on Tuesday.  He absolutely loved it and gave it a 12 out of 10!  I used frozen diced cut hash browns rather than peeling & cutting my own.  I cooked the chicken in cream of chicken soup first with the spices I chose to make it nice and tender and flavorful. I added a little bit of parmesan cheese to the took the last 10 minutes of cooking.  (The red on the top in the last photo is "Louisiana" hot sauce that Mel adds to almost everything!) Mel said it was "flavor heaven" & wants me to make it often - so I will.

Peanut Butter Marshmallow Fudge




 
This is a recipe my sister & I have been passing back and forth for about 15 years.  I lost my copy & got it again from her.  I remember this recipe being totally different.  For one thing, I remember it being like real fudge, not a mushy mess!  I'm not sure if I messed it up or what, but as you can see by the mush in the spoon, it never solidified as it was supposed to.  I even froze it as my sister suggested.  The flavor was still really good though, at least an 8 per Mel and me.  I may or may not try it again.  Oh, and I had to include the top photo with our cat, Oliver.  He wanted to lick the empty sweetened condensed milk can!
