Mixed Fruit Crisp




I'm sure you're tired of fruit crisp pictures, but this is the last of them!  I wasn't even going to take pictures this time except that I tried something different.  In my Chef Ramsay cookbook, his recipe for fruit crisp (he calls it a crumble), calls for granola rather than oatmeal.  Since I had recently got some granola for my yogurt, I decided to try the recipe Chef Ramsay's way.  I also added a bit of coconut extract.  Mel and I both like the topping better with granola (all other ingredients in the topping stayed the same).  The mixed fruit was good, but the sweet potato crisp is still by far our favorite!  Next time I will make the sweet potato with the granola crisp topping - yum!

Mel -n- Julie's BBQ Beef -n- Tater Wrap




Mel and I love wraps so much we decided to invent our own recipe. I don't have all the ingredients in the picture. We both had diced potatoes, corn n peppers, and minced garlic sautéed in butter and spices, feta cheese, sliced tomatoes, lettuce, and salsa (his hot, mine mild).  His also had BBQ shredded beef and cilantro (he's making some for a late night dinner right now & I he's also adding jalapenos).  Mine had vegetarian BBQ "beef ribs" and sour cream.  These were the yummiest wraps we have ever had, very easily a 10!  We will be making this new favorite again!

Sweet Potato Crisp



I mentioned in my last blog entry that I had come up with a new idea for a crisp.  Well, here it is, Sweet Potato Crisp with Maple Nut Ice Cream.  Mel & I both think this is by far our favorite of the crisps!  So super yummy!!  The only thing we think would make it better would be butter pecan ice cream, although the maple was an excellent touch as well!!  I will definitely make this again!!

Blueberry-Cherry Crisp





I posted the peach-pear crisp a few blogs ago & I mentioned Mel would rather have a crisp for his birthday than a cake.  His b-day isn't until the 21st, but I made this for him last night.  I didn't take pictures of the ingredients since it's the same as the last crisp except for the fruit.  This combination was Mel's creation with fresh blueberries and a can of whole cherries.  We used Breyer's cherry vanilla on top.  Super yummy, a 10!  I'll be making another flavor later this week or next, but you'll just have to be surprised to see what combination I came up with - it's one I've never tried or even heard of before!   Had to post Bailey & Jonah intently watching Mel scoop out the ice cream!!
