Ricotta Lemon Cake With Blueberry Topping





I made this cake this morning to celebrate what Mel & I have dubbed "Mel & Julie Day."  It is the anniversary of the day we met: March 6, 2012!  I had to make it today instead of on Thursday because we will be busy all week.  This has got to be one of the best cake recipes I have ever used!  It is so super moist and flavorful!  I used more lemon extract than it called for. added vanilla to the batter and to the fruit topping, I used all the juice from the lemon in the topping and not just 1 tsp., and I used a mixture of blueberries and strawberries because it was cheaper to buy a bag of mixed than straight blueberries!  Mel & I both give this cake a 10 and I will absolutely make it again and again!!

P.S.  Happy 2nd Mel & Julie Day, honey!  These have been the best 2 years of my entire life. 

P.S.S. By the way, I chose this particular recipe because Mel's favorite dessert flavor is lemon & mine is blueberry!  This cake is a perfect blend of us!!
 

Yet Another Name Change

If you are a regular reader of this blog, you'll notice I changed the name again.  I just found out that "love monkey" is a sexual term.  I guess I was just too naïve to realize this.  I apologize if anyone was offended, I was not trying to be indecent.  Anyway, the new name falls under the same concept of the old: it reflects the incredible love between my wonderful husband and me!
