Pumpkin & Sweet Potato Rugelach





The last time I made Rugelach was the first day I met my Mel!  http://thankful-julie.blogspot.com/2012/03/traditional-rugelach.html  I made them again for him for sentimental reasons.  This time, however, I decided to try my own ideas for 2 different flavor fillings.  The first one was pumpkin pie filling and white chocolate chips (my favorite) and sweet potato puree, butterscotch chips, and marshmallows (Mel's favorite).  These were so good, we both give it a huge 10.  Next time I will experiment with some more flavor ideas!! 

Julie's Breakfast Burritos






I made these for our lunch (even though I'm calling them "breakfast" burritos!) on the 17th!  If we had hash browns or tater tots, that would have been better, but we have a lot of French fries right now, so I decided to do something creative with them.  You'll notice that the eggs were scrambled in the picture of the table w/ all the ingredients laid out, but fried in the last picture.  When we had leftovers  the next day, I decided to fry the eggs in a little bit of butter instead od scrambling them - they were already a 9, but frying the eggs made them a 10 (Mel gives them a 12!).  I will absolutely make these again!

Julie's Rice -n- Hamburger Casserole






I made this for our dinner on Monday.  It is also another creation based on mostly food pantry items.  I was going to add tomato soup to mine, but decided to switch to the 1/2 a bottle of cheese sauce instead.  This was much better than I had expected - very easily a 10 from both Mel and me.  Mel's was made w/ hamburger and gravy (not from the food bank) and mine was meatless with cheese sauce (also not from the food bank), we both had onion, green pepper, & red pepper sautéed in butter and balsamic vinegar, then I added corn, black beans, and diced tomatoes to the same pan.  We both added salsa and parmesan cheese to the top.  So yummy, and I will probably make it again next week!
