Julie's Super Simple Salmon
We were given some locally caught salmon about 3 weeks ago. I was a little afraid to cook it as I have never cooked any fish that hadn't come in fish stick-form or from a can! But I did not want it to go to waste, nor did I want to deprive Mel! So I decided to experiment and use my instincts. I made it very simple as we are lacking in any ingredients until payday. I drizzled it with olive oil, then sprinkled it with sea salt, lemon pepper grinder (any pepper that doesn't come from a grinder is not even worth using), and a lot of dill. I then wrapped each piece individually in aluminum foil, and baked at 400 degrees for 25 minutes, flipped, and cooked another 25 minutes (as it was still cold - it had been in the freezer). I served it with baked BBQ fries (from a bag, not homemade), and of course, Mel doused it all with Sriracha. Mel said this was the best salmon he has ever had, even better than any restaurant. Of course, I'm sure part of that has to do with the fact that it was local, but he said it was seasoned perfectly! Mel loved this so much that I think I will probably never use frozen fish sticks again!
