Cowboy Beans
I made this dish for Mel on Saturday. I got the recipe from the back of a can of jalapenos (not the brand in the picture - I think the brand name was La Costena or something similar). The recipe suggested wrapping it in a tortilla, but Mel wanted to dip tortilla chips in it. Mel absolutely loved this dish - said it is his new favorite thing to eat! The only thing I changed was that it called only for 3 cans of pinto beans, but I used 3 different kinds of beans instead. Also, I did not have the coriander it called for, so I used a mixture of chili powder, red pepper (cayenne), and cumin. Also, it called for 2 jalapenos sliced, but Mel wanted 3! Mel cannot wait for me to make this again!
