Julie's Pasta Salad & Applesauce Oaties
I know I haven't posted in a while, but our budget is pretty tight so I haven't been doing much in the kitchen lately. I made the pasta & cookies for a Mother's Day picnic on Sunday (my mom & Frank came for a visit).
This is my own pasta salad recipe. The unmarked cans in the photo are Mexican corn. I also added some parmesan cheese. Turned out pretty good, and everyone seemed to enjoy it!
My mom had requested oatmeal raisin cookies for Mother's Day, so I decided to use this recipe I had never used before. Much better than "regular" oatmeal raisin. The applesauce in them made them very moist & the cinnamon & nutmeg gave them a nice kick. I also added 1 teaspoon each of vanilla & lemon extracts. They called for chocolate chips, but I used butterscotch, and I couldn't afford the walnuts the recipe mentioned (would have been even better with nuts). These were excellent, and everyone loved them. I'll make them again.
