Julie's Pierogie Lasagna



I made this for our dinner last night.  It is 100% my idea.  Last time I bought pierogies, I started thinking they would be good in a lasagna.  So it's basically a lasagna with vegetarian beef, veggie sausage, and substituting lasagna noodles for potato & cheddar pierogies.  Other than that, it's pretty much just like regular lasagna.  Mel & I both love this & give it a 10!  I will make it again, but there are 2 things I would change: First, I would add a couple of green peppers to the sautéed onions (which I sautéed in butter w/ the veggie meats and diced tomatoes & seasonings), and second, I would exchange the diced tomatoes for fresh ones.  I didn't get a very good photo of it, but it tastes much better than it looks.  Feel free to steal this idea, I know you'll love it too!!

Mascarpone With Jam Cookies




I made these cookies last night as well.  They were supposed to be made with fig jam, but I couldn't find any, so I used our favorite: blueberry preserves.  I rolled the dough in cinnamon-sugar before flattening them & adding the jelly and I added a bit of cinnamon to the batter.  Everything else I did the same. These were really good!  Mel gave them a 10, and I give them a 9!

Julie's Stuffed Green Peppers & BBQ Beef (or Veggie Bacon) Nachos






I haven't posted in a while because money has been very tight lately & I really haven't had the money for food other than frozen, canned, or boxed.  But I'm not here to whine.  Mel got paid Monday, so we got the ingredients for a few things.

I made the nachos on Tuesday.  I got the idea from a TV show I mentioned before called "Best Food Ever."  They used BBQ pulled pork, but Mel prefers the taste of beef.  I put vegetarian bacon on mine.  We preferred shredded cheese to the liquid cheese, so we changed that from the TV version as well.  Mel's also had: spicy refried beans, spicy Pico de Gallo, and medium salsa.  Mine also had: vegetarian refried beans, no Pico de Gallo because I couldn't find a mild one, and mild salsa  Mel loved his, said they were a 10 and wants them often.  For some reason the veggie bacon didn't taste as good as usual or even crisp like it normally does (maybe it was old?), therefore I didn't care for mine as well.  It was much better the next day w/o the veggie meat.  With it, I'd only give it a 7.  without it, a 9, but it needed sour cream.  You can't usually go wrong with nachos!

Stuffed peppers have always been one of my favorite dishes, but for some weird reason I haven't made them since being married!  I made these last night.  They were so very yummy!  I don't have an actual recipe, I just make them my own way.  Mel's had: beef, Santa Fe rice, & jalapeno black beans, and mine had: veggie maple sausage, cheese rice, and plain black beans.  We both had sautéed onions in butter w/ diced tomatoes and cheese.  I don't like to toot my own horn, but toot toot, these were the best green peppers I've ever had.  I think it was the veggie sausage that made it so good.  Mel said his were also the best he has ever had and said it was "Flavor heaven."  We both gave it a huge 10 and I will be making these a lot now!
