If you regularly read my blog, you know that the last time I attempted to make meatloaf for my husband was a disaster http://animalsfaithmiddleearth.blogspot.com/2013/04/salsa-bbq-meatloaves.html . However, I was determined to try again because he loves meatloaf. So I decided to use an actual recipe this time since, as a vegetarian, I haven't made meatloaf in about 5 years & I had forgotten how! This time was successful! Mel loved this recipe, gave it a 10, and said it was even better than "The Cheesecake Factory" meatloaf! It seems so simple, but I think it was the combination of spices I chose and the fact that I sautéed the spices with the onion & butter rather than simply mix them into the uncooked beef. As with the other recipes I have used from this cookbook, I omitted the "Benefiber" powder. I will make this for Mel again!

Hamburger Potato Pie
I made this tonight for our dinner. Mel's was made w/ beef and apple wood smoked bacon mashed potatoes & mine was made with veggie beef and four cheese potatoes, but everything else was the same. Mel says this was a "10 - how could it receive less than a 10?" Super sweet, isn't he! He loved it and wants me to make it often. I really liked it too, but give it a 8 1/2 because it needed a more texture and flavor. I would like to add green peppers, corn, and maybe black beans next time.
