I made these yesterday & finished them today. Our church is hosting a dinner tonight for the Salvation Army so I made the cookies for the dinner. I am also making tater tot casserole (in the oven now). Peanut Butter cookies look dumb because they spread, but they still taste very yummy. I also made them for Mel when we were dating since p.b. are his favorites. They are a 9 and so are the chocolate chip cookies.
Adventures in cooking and baking from a humble home cook. Nothing fancy or gourmet, just simple recipes that are really yummy and fun to make for my precious husband!!

Mel's Chili With Corn Dogs & Jalapenos
Okay, so this is not a "made-from-scratch" recipe, but I wanted to post it anyway. Mel is very creative in the kitchen, and has come up with some very good ideas. This is one of them. He cuts up two corn dogs and places them in a can of chili and adds sliced jalapenos, and sometimes hot sauce (his favorite is Cholula Chipotle). And yes, he has to take an anti-heartburn pill when he has this one!! This is one for the manly man! I will have to try it w/ veggie corn dogs and veggie chili soon!

Mel's Favorite Foods: Mexican Lasagna
I got this recipe from the Costco cookbook my sister got me a few years ago. We both love this one too! I made his with beef, & beef chorizo & mine was with veggie beef. He also had spicier salsa in his and his black beans had jalapenos in them. This recipe is supposed to have onions and peppers in it, but since it already has salsa in it, I traded those ingredients for corn, black beans, and fire roasted garlic tomatoes. It's supposed to have sour cream in it, but Mel hates sour cream. I forgot to add it to mine until it was already in the oven, so I just put it on top as you see in the photo.

Mel's Favorite Foods: Tater Tot Casserole & Peanut Butter Goodies
I call this recipe "Julie's" because I could not find a tater tot casserole recipe I liked. So I combined 2 (or 3) different recipes and added my own touches and came up with this one that Mel & I really love! And I made the no-bake cookies for him again because he really loves oatmeal & peanut butter!
Mel's Favorite Foods: BBQ Eggs N Taters Wraps
I got the concept for this recipe from the "Wraps" cookbook, but I changed it a little bit. I don't remember the way the original recipe was, but this is my version. Mel loves potatoes and eggs and BBQ sauce, so this is a perfect combination for him. I love it too. In fact, all of Mel's favorites foods I'm crazy about too!! Expect he likes them much spicier and with meat, while I am a wimp when it comes to spicy and I prefer veggie meat! (that's veggie bacon we're using)

Chef Lou's Stuffed French Toast With Apple Syrup
I got this recipe when Mel & I were in McCall for the Winter Carnival. We had the news on to check the weather, and they had the morning cooking segment come on. This recipe looked so wonderful, I had to try it! We used blueberry preserves instead of apricot (Mel's brilliant idea) & skipped the whipped topping. Mel & I both love this and give it a 10 ++!! He says it is the best french toast he has ever had. I will make this often!!

Mel's Favorite Foods: Julie's Taco Salad With Homemade Guacamole
I know Taco Salad is not really any grand invention, I just call it "Julie's" because it is how I make it & it's not from any recipe book. I usually like veggie beef and sour cream on mine, but we didn't have time to buy them before I made this. The guacamole recipe is from the Gordan Ramsay: Fast Food cook book.
