Not of any real interest, but... (I love to cook)
The only magazine I subscribe to is “Bon Appétit.” I tried the “Lamb Kofte With Yogurt Sauce and Muhammara” recipe this weekend (from the Jan.2010 issue). I don’t eat meat, so I tried it w/ veggie crumbles. Unfortunately they weren't the right consistency to form a meatball, so I browned it in the skillet. I also tried a few other modifications b/c that's my favorite way to cook: to cook: to make the recipe my own. It is probably the most unusual recipe I have ever cooked, but really yummy.

Have you ever used tofu for meatballs or in place of ground beef. Take a block of extra firm tofu. Freeze it. When you defrost it, it will crumble and you can season it and cook it like ground beef. IN a ground beef dish it has the right texture! I have not tried making it into meatballs, but with some eggs and maybe panko or seasoned bread crumbs it could work! Worth a try.
