Butterscotch Cheesecake






I made this cheesecake for our 3rd anniversary (June 10th) last week.  For some reason I had a note on this recipe to cut the filling in half, but I could have easily used the whole recipe.  I must not have had a spring form pan back then to hold all the filling.  Anyway, the recipe calls for a chocolate cookie crust and chocolate chips, but I used graham crackers crumbs for the crust & butterscotch chips.  The cheesecake was easily a 10, but, for some reason, the crust burnt so badly it was not edible.  Not sure why the cheesecake cooked perfect & the crust didn't.  Better luck next time!!
