Coconut Cake
This is Mel's birthday cake. I made it in a train-shaped pan because he loves trains, but I didn't feel like being fancy and decorating it to look like a train - probably next time. I made this with lemon instead of yellow cake because Mel loves lemon & coconut together. It turned out pretty yummy - an 8 1/2 to 9.
Asian Coleslaw With Sesame Vinaigrette
I made this for Mel's birthday picnic today. It was at least an 8 until added more of the vinaigrette, then it became to oily. I should have followed the amount to be used. I used lettuce instead if cabbage because Mel hates cabbage. I added poppy seeds. It would have been good with double the oranges and almonds. I would love to make it again, but with the proper amount of vinaigrette!
Carrot Cake Cupcake Cream Cheese Frosting
I made these for Mel's birthday! They are a 10!!! Don't you love the cute cupcake holders - yum bots & silly feet! You make the cupcakes in them and they can be baked in the oven in the holder!
