Based on the title of this recipe, you can see I changed it & did not cut them into slices after rolling them into the pizza pocket; I thought they would taste better this way. They were so super good, a 10 from both Mel and I! Mel had salami on his and I had just sauce, cheese, & the seasoned tomatoes. But even w/ so few ingredients they were amazing! This little "Tomatoes" cookbook was a very good investment!! Mel is already asking me to make these again!!

Colorful Garbanzo Bean Salad & Summer Risotto
Both of these dishes were a 10! So super yummy; even my meat-eating hubby loved these vegetarian dishes as much as I did!! And so easy to make - they will both be frequent dishes in our home.
Ever since first watching "Hell's Kitchen" around 5 years ago, I have always wanted to make risotto. It's much easier than I expected, and so amazingly good - I've been craving it ever since and can't wait to make more!!
Shrimp Tacos & Game Night Nacho Pizza
I am finally getting around to posting all my new recipes. I tried them all from this wonderful "Tomatoes" cookbook. (Posted in no particular order)
The shrimp tacos with homemade salsa (photos 2-4) were, of course, only for Mel. He loved these and gave them a 10! They were pretty easy and I will make them again for him.
I made 2 versions of the Game Night Nacho Pizza (I would call it BBQ Taco Pizza). Mel's had BBQ pulled beef and jalapenos(photo 6), mine was w/ veggie beef and BBQ sauce (photos 7-8). These were super yummy - we both gave it a 10 and I will make again!
