Peanut Butter & Jelly Squares
It was so nice to bake again! Our finances are super tight right now so I've been pretty limited in the kitchen. However, I made these with ingredients we already had at home. Since I made them in a pie pan (I don't have the right size square pan), I'd actually call this "Peanut Butter & Jelly Cookie Pie." Mel loves PB & J sandwiches so I made these with him in mind! This is a wonderful recipe (as are all in the Mrs. Fields cookbook). The cookie part tastes like delicious shortbread, and the PB & J filling is so yummy! Mel & I both give this a 10! I will absolutely make these again!
P.S. I realized when I was uploading the photos that I forgot to add the powdered sugar to the filling, but I'm glad I did. It was sweet enough without it & I think I'll just scratch that from the recipe.

Amazing Lemon Cheesecake Bars
These are partly homemade & partly box-made. The recipe was on the back of the box for the lemon bars. I made it Monday for a mother's day picnic. It was supposed to chill in the refrigerator for an hour or more, but I literally took it straight from the oven to the park. The pics of the finished cheesecake were taken at Luby Park. It would have been better (I think) if it had had time to set better. Mel gave it a 10, but I only give it a 7 1/2, maybe 8. I thought they were a little too sweet. I may or may not make it again.

Fruity Water
Yes, I am so desperate to post on this site I'm actually posting about water! I keep seeing these yummy recipes from Facebookers for enhancing water. So I decided to try my own combination: 1 orange, 1 lemon, & 5 key limes. Mel & I really love this! So refreshing & healthy! I want to try pineapple / orange next.
In the picture of the pitcher (Ha ha I'm such a dork!), the design kind of gets in the way, but you get the idea.
